Bison Bolognese

Ingredients
20 oz ground bison meat
1 onion diced
3 Tbl spoons minced garlic
2 T dried oregano
1/4 tsp crushed red pepper
10 oz dry red wine preferably something Italian
1-28oz can crushed tomatoes
1 can tomato paste


In a large skillet place a couple tablespoons olive oil and heat the pan. Once hot Brown the Bison in pan over medium high heat. Use a sturdy wooden spoon to crumble the bison and scrap the bottom of the pan. 

Once ground meat is cooked and no longer pink add your diced onion cook until onion becomes soft and translucent.

Add garlic, oregano, crushed red pepper stir and cook for one more minute or until the garlic becomes fragrant. 

 
Add in a small amount of the wine and deglaze the pan scrapping up all the brown bits, those are the best bits and flavor the sauce so beautifully.
Once all the wine is in, add the can of tomatoes and the can of tomato paste. Bring to a simmer, taste and add in salt and pepper to taste. Let simmer for 20 mins, taste for salt and pepper again.
Serve with cooked pasta right away or cool and place in fridge or freezer for latter.
