Irish Soda Bread
3 1/2 cups AP flour
1/2 cup whole wheat flour
1/4 cup sugar
1 tsp baking soda
1/2 Tablespoon salt
2 oz butter cut into 1/2" cubes (preferably Irish butter)
zest of one orange
1 cup dried currants
1 3/4cups buttermilk
1 egg
- Combine AP flour, whole wheat flour, sugar, baking soda, salt, orange zest, butter, and currants in a mixing bowl.
-Mix with paddle attachment until the butter is cut up into the size of small peas.
-Add eggs and buttermilk.
-Mix until just combined
-place dough on heavily floured surface, knead slightly just enough to retain it's shape
-Shape into a ball, place on sheet pan cut an x on top
-Bake at 375F for 55 mins
*serve with Irish butter and bit of Marmalade
