Buttermilk Biscuits

Buttermilk Biscuits

yields about 8 biscuits
What you need:
2 cups AP flour
1/2 cup whole wheat flour
2 Tablespoons baking powder
2 teaspoons sugar
1 teaspoon salt
1/2 cup unsalted butter cut into 1/4" cubes
1 cup Buttermilk


Place AP flour, whole wheat flour, baking powder, sugar, salt & cold butter into a mixer fitted with the paddle attachment.


Mix on low speed speed until the butter gets cut into small pieces. The mixture should look rough and not stick together.


Add the cold buttermilk all at once and mix on low until almost combined. 


To get nice fluffy biscuits don't over mix the dough. When it looks like the picture above stop the mixer and mix finish by hand.


Squeeze the dough together with your hand forming the dough into a ball. 
Don't kneed the dough!


Press onto a floured surface no rolling pin required. Your dough should look crumbly and uneven. That's ok biscuits are rustic.  Press the dough flat until it is about 1" thick.


Don't have a round cookie cutter? That's ok use an upside drinking glass.


Brush with buttermilk and refrigerate while your oven pre-heats or freeze for future use. 


Bake at 400F for about 20 mins until the bottoms are browned
