Chimichurri Potatoes

Roasted Chimichurri Potatoes 

Always a favorite at my house Roasted Potatoes are simple and delicious using Elvio's Chimichurri 

What you need:
3lbs or more red potatoes
Elvio’s Chimichurri sauce
That's It!

Wash and scrub your potatoes
Cut into large chunks


Toss with Elvio's Chimichurri making sure to stir the jar and gets lots of those good spices.  Use enough so that all of the potatoes get coated in the garlicky oil. I used about 1/4 of the jar for this.
No need to add salt or pepper it's already in there. 


Bake in an oven proof dish at 400F for about an hour
stirring occasionally so the potatoes don't stick to the dish


Serve! If you happen to have any leftover they are good reheated or made into hash browns the next day for breakfast.

I don't personally know Elvio but I do know his daughter Ailin who introduced me to Chimi.  Ever since then Chimichurri has been a staple in my kitchen and I love introducing it to other people as well.  One day I hope to meet Elvio and cook with him and his wonderful family.
