Cake Doughnuts

Ok so I was really skeptical of this recipe especially considering the directions(do not ever try to boil oil.) They came out much better than expected. These are not fluffy yeast raised donuts but rather the more dense cake type doughnuts. I don't remember my dad making doughnuts but hopefully someone does.
(yield about 16 doughnuts)
Ingredients
3 1/2 cups flour
1 cup sugar
2 tsp baking powder
1/2 tsp salt
1/2 tsp cinnamon
1/4 tsp nutmeg
2 Tbl butter melted
2 eggs
3/4 cup milk
In a bowl, stir together the flour, sugar, baking powder, salt, cinnamon and nutmeg. Make a well in the center and pour in the milk, eggs, and butter. Mix until well blended. Cover and refrigerate for 1 hour.
On a heavily floured surface, roll chilled dough out to 1/2 inch thickness. Use a 3 inch round cutter to cut out doughnuts. Use a smaller cutter to cut holes from center. Save the centers for doughnut holes.
Heat oil in a pot to 350 degrees F. Fry doughnuts, in hot oil until golden brown, turning several times every few minutes to make sure both sides are properly browned.
For doughnut holes because they do not lay flat in the oil it is best to keep them constantly moving to avoid one side being darker than the other.
Remove from oil to drain on paper towels.
Coat in powdered sugar or your favorite glaze.
To coat in powdered sugar place doughnuts in a container with a lid and shake.
Doughnut Glaze
2 cups powdered sugar
1 tsp vanilla
4 Tablespoons milk
Whisk all ingredients together to create a thick glaze. Dip top half of the doughnuts in glaze and add whatever fun sprinkles you have on hand. Let dry or not, and eat!
