Cauliflower Steaks

Cauliflower steaks with white beans and tomatoes

Super easy week-night meal that is delicious and healthy after a long day at work. 
(serves 2)

What you need: 
1 Head of Cauliflower
1 can of white beans
1 can of diced tomatoes 
Elvis Chimi Rub
Avocado Oil
Can of fish such as Mackerel (optional)


Cut the stem off the cauliflower so it is level. You can leave the small leaves they are edible as well. 

Should look like this on the bottom.

Flip the head of Cauliflower right side up and cut directly in half right through the stem.

Next Cut off the sides. Saving the Florets for another nights meal.

You should end up with two nice cauliflower steaks and a bunch of leftover florets. 

Next coat the cauliflower in avocado oil or oil of your choice.

Generously season with Elvio's Chimi rub.

Next Open and drain a can of white beans, add the beans to the pot with a can of diced tomatoes. I like to get the tomatoes with Italian spices seen as how they are already flavored. I keep a can in my pantry for quick dinners such as this. 

On a hot Griddle or pan sear the Cauliflower steaks about 8 mins on high or until that side is nice and caramelized brown. At the same time simmer the beans and tomatoes together.

You want the liquid in the beans to reduce and thicken up. 

Flip over the cauliflower and sear the other side as well. Once both sides of the cauliflower are seared to a nice brown check the stem of the cauliflower, I like mine seared dark so it's usually cooked all the way through. If it seems firmer than you would like place the cauliflower in the oven at 400F until done. 

Place a bed of beans in the middle of the plate and top with the cauliflower steaks. 

For Added protein I like to open up a can of fish such as mackerel or salmon fillets. You can keep all of the items in your pantry except the cauliflower, making it an easy emergency dinner when your tired after working 10 hours like me.
