Pancakes
Pancakes
yield about 8 medium sized pancakes
Another one of my dad's recipes, I love how flour is misspelled as flower on the card. Although most of the time my dad would just use the Krustez pancake mix, he would make pancakes for my sister and I, especially when we were camping. My favorite was always chocolate chip pancakes in the shape of Mickey Mouse.
yield about 8 medium sized pancakes
Ingredients
2 cups flour
4 tsp baking powder
2 Tbl sugar
1 egg
1/4 cup oil
1 3/4 cups milk
2 cups flour
4 tsp baking powder
2 Tbl sugar
1 egg
1/4 cup oil
1 3/4 cups milk
Directions
Combine flour, baking powder, and sugar in a large mixing bowl whisk together and set aside.
In a separate bowl combine egg, oil, and milk. whisk together until egg is broken up.
Make a well in the dry ingredients and add the wet ingredients mix until just combined. A few small lumps is fine.
Cook on a Griddle over medium heat, one ladle full at a time.
For blueberry or chocolate chip pancakes ladle the batter onto the griddle then sprinkle with blueberries or chocolate chips while the batter is still wet.
*The batter does not hold well on it's own so if you have extra batter make the rest of the pancakes and then freeze them. Then you can pull them out and toast them in the oven for about 5 mins at 400F.
