Banana Bread

Banana bread

When I was kid my dad would make banana bread with old black bananas, this was the recipe that he would use. 

Ingredients

1/3 cup butter
1/2 cup sugar
2 eggs
1 3/4 cup flour
1 tsp baking powder
1/2 tsp salt
1 1/2 cups mashed ripe banana
1/2 cup chopped walnuts

Directions

Cream together the butter and sugar

In a separate bowl combine flour, baking powder, and salt

Add eggs one at a time to the butter and sugar mixture scraping down after adding each.

Alternate adding in the flour mixture and mashed bananas. Starting and ending with the flour.

Pour batter into a greased loaf pan and bake at 350F for about 45 mins. 


Let cool for about 5 minutes, then while still hot take a heatproof rubber or plastic spatula and loosen the sides. It's easier than using a knife and won't scratch the coating on your loaf pan. Then Flip the bread out of the pan using a clean kitchen towel and let cool the rest of the way on a wire rack

I was being lazy so I let the bread cool on my stove top grate. I never use the center burner so it's clean and still allows air to circulate around the bread.
