Apple Cake
Ok so this recipe I can read as it is nicely typed up on a vintage typewriter. I remember my grandmother had an old typewriter that I used to play with as a kid. However it is missing a few instructions such as what size pan do you bake it in and how big should the chopped apples be. So I made my own measurements for that and It came out very tasty. I also served it with some whipped cream Fraiche, If you don't have creme Fraiche you could also just serve it with some whipped cream or just a cup of coffee. I got my Fuji apples from my friend Chavez who got them Prevedelli farms in Watsonville.
Ingredients
4 eggs
2 cups sugar
1/2 cup oil
2 cups AP flour
1 tsp salt
1 tsp cinnamon
1 tsp nutmeg
1 tsp baking soda
1 cup chopped walnuts
4 cups peeled and medium diced apples (about 4-6 apples depending on size.)
First get all of your ingredients together. Peel and cut the apples last so they do not oxidize. I made my cake in my kitchen aid but you could easily make it without a mixer.
Combine sugar, oil, and eggs in the mixer with the paddle attachment. Mix until everything is combined. Vegetable oil would be good but I did not have any so I used Olive Oil and it still came out great.
Then add the flour, salt, cinnamon, nutmeg and baking soda. mix on low speed just until combined. Scrape down the sides of the bowl.
Add in the apples and walnuts
The recipe does not say what size pan to use but you could probably use just about any size pan you have. I used a 10" springform pan because I wanted the cake to be nice and tall. A 13" X 9" pan would also work well just bake it for less time then I did.
I ended up baking my cake at 350 for about an hour and 10 mins.
Let cool and remove from pan. This cake turned out super moist, maybe a little heavy on the nutmeg but I would make it again.
