Carrots and Rutabagas

Another family favorite of mine, we always had carrots and rutabagas for the holidays. My grandma said that it was part of our english heritage that her parents brought with them from England. If you don't know what a rutabaga is, it is a root vegetable that looks like a turnip but is less sweet. Once my grandma bought a turnip by mistake and it was not nearly as good. It's fun buying rutabagas as it often stumps the grocery clerk. 
Ingredients
1 rutabaga weighing about 1lb
1 1/2- 2 lbs of carrots more carrots make it sweeter
1 oz butter approximately 
salt and pepper to taste

First peel and dice the rutabaga into small pieces about 1/2 big. Like my grandma I like to use baby carrots as they are already peeled and cut for you. If you don't know baby carrots you buy in the store are just large carrots that have been whittled down.

 So my family always used a pressure cooker to cook their carrots and rutabagas so I use an instant pot on the pressure cooker setting for about an hour. If you don't have a pressure cooker a pot filled with water will work just fine. The same way you would cook potatoes for mashed potatoes.

Place you rutabagas and carrots in the pot or pressure cooker with water and cook until both are fork tender. 

After you've cooked your carrots and rutabagas drain the water from the pot.

Add butter, salt and pepper, I prefer to use white pepper but black pepper will work just as well. Then take a pair of egg beaters and in the pot mix everything together until it is a chunky mush. 

Like I said it's not fancy but we did eat it every Thanksgiving and Christmas.
