What I like to do with bones from a roast
Every year for Christmas my family has a big Prime Rib Roast. It is so delicious and so wonderful, and I don't want to waste those delicious bones. After the roast has been served I put them in the fridge until I'm ready for them.

Then I put the bones in a baking dish and roast them at 450F for about an hour. I used a small 9X13 pan the reason for this is so as the fat is rendered it falls into the pan. The Fat will be used to make a delicious Yorkshire pudding later and I won't have to transfer the fat to the pan later. |
Take the bones from the pan then pull all the meat you can off shredding it as you go. I like to use the meat for a ragu sauce or in a risotto.
Then take your clean bones add your mire poix (an onion quatered, a carrot roughly cut, and two sticks celery and add some water and make beef stock. If you have an Instantpot cook for 1 hour 15 mins on high. Strain out the bones and vegetables and you have great homemade beef stock.
